Reims is an easy 90 minute train trip and is the place to be in Champagne if you do not have a car: there are places to eat and stay, nightlife abounds, and there is plenty besides just Champagne production there! You can easily even take a guided day trip from Paris and put your brain in neutral as you are escorted around. The Gallo-Roman cellars of Reims, based in 2000 years old chalk quarries, are extremely impressive.
Epernay is the center of Champagne and most residents work in the Champagne trade. It is a short 70 minute train ride from Paris, and is high on the list of places to visit with more Champagne Houses than Reims, several within walking distance from the train station. However Epernay pretty much closes up at night and unless you have a car you are far less likely to stay there.
